Chicken Meatball Asparagus Soup
Ingredients
- 10 tbsp olive oil
- 1 medium onion (chopped)
- 1 large bunch asparagus (thinly sliced)
- 5 leeks (white part only, thinly sliced)
- 6 cups chicken broth (fresh or canned)
- 1 lb ground chicken
Instructions
- Heat a stockpot over medium high heat.10 tbsp olive oil
- Add 3 tablespoons olive oil.
- Add the onion and sauté until light brown, about 7-10 minutes
- Add asparagus and leeks. Sauté another 5 minutes.
- Add the chicken broth and bring to a boil, then reduce heat and simmer for about 15 minutes.
- Meanwhile, mix the ground chicken with salt and pepper. Make small meatballs, about 1 inch in diameter.
- In a 10-inch skillet, heat 6-7 tablespoons of olive oil and fry the meatballs until brown on all sides.
- Add the meat balls to the soup.
