Chicken Meatball Asparagus Soup

Ingredients
  

  • 10 tbsp olive oil
  • 1 medium onion (chopped)
  • 1 large bunch asparagus (thinly sliced)
  • 5 leeks (white part only, thinly sliced)
  • 6 cups chicken broth (fresh or canned)
  • 1 lb ground chicken

Instructions
 

  • Heat a stockpot over medium high heat.10 tbsp olive oil
  • Add 3 tablespoons olive oil.
  • Add the onion and sauté until light brown, about 7-10 minutes
  • Add asparagus and leeks. Sauté another 5 minutes.
  • Add the chicken broth and bring to a boil, then reduce heat and simmer for about 15 minutes.
  • Meanwhile, mix the ground chicken with salt and pepper. Make small meatballs, about 1 inch in diameter.
  • In a 10-inch skillet, heat 6-7 tablespoons of olive oil and fry the meatballs until brown on all sides.
  • Add the meat balls to the soup.
