Instructions
Heat a stockpot over medium high heat.
10 tbsp olive oil
Add 3 tablespoons olive oil.
Add the onion and sauté until light brown, about 7-10 minutes
Add asparagus and leeks. Sauté another 5 minutes.
Add the chicken broth and bring to a boil, then reduce heat and simmer for about 15 minutes.
Meanwhile, mix the ground chicken with salt and pepper. Make small meatballs, about 1 inch in diameter.
In a 10-inch skillet, heat 6-7 tablespoons of olive oil and fry the meatballs until brown on all sides.
Add the meat balls to the soup.
